- DO NOT USE CHEESE CLOTH FOR YOUR CLOTH COVER - FRUIT FLIES WILL INFILTRATE YOUR KOMBUCHA, INSTEAD USE %100 COTTON CLOTH COVER OR A TIGHTLY WOVEN BREATHABLE CLOTH.

- IT IS VERY IMPORTANT KOMBUCHA HAS ACCESS TO AIR WHILE IT FERMENTS. YOUR BREWING VESSEL NEEDS TO HAVE A WIDE TOP OPENING. IF YOU HAVE A ONE GALLON GALSS JAR, BE SURE YOU CAN FIT YOUR HAND INSIDE THE JAR WITH EASE.
